Garnished Rice
This rice recipe is cooked with beef tallow and no chicken liver. It’s fragrant, nutty, and slightly sweet, making a simple roast into a memorable meal. Black currants add sweetness, warm spices give aroma, fresh dill brightens it, and almonds provide crunch.
Ingredients
- 1 tablespoon beef tallow
- ½ onion, diced
- 1 pint rice, washed
- 2 pints water
- ⅓ cup black currants
- ⅓ cup sliced almonds
- ⅓ cup coarsely chopped dill
Spice Mix
- ¼ teaspoon black pepper
- ½ teaspoon cinnamon
- ½ teaspoon allspice
- 1 teaspoon salt
Steps
- Sauté the onions in beef tallow.
- Add the rice and gently stir for 45 seconds.
- Add the black currants.
- Add the water and spice mix. Bring to a boil.
- Lower the heat to a simmer. Set a timer for 20 minutes.
- Check doneness and turn off the heat.
- Fold in the almonds and dill, then let the pot rest.
Serving
Serve the garnished rice with roast turkey or chicken.
