Dutch Babies
A special treat for weekend breakfasts, this recipe was one of the first to be written down, because it’s hands down the best crepe variant there is. Original inspiration is from Chef John.
Preheat oven to 425 °F
Ingredients
- 42 grams butter
- 4 eggs (room temperature)
- ⅓ cup of flour
- ⅔ cup of milk (room temperature)
- ¼ teaspoon salt
- ¼ teaspoon vanilla extract
Steps
- Place a 12” cast-iron skillet (the big one) in the preheated oven and melt the butter until bubbly.
- Blend all ingredients until smooth.
- Pour the batter into the melted butter.
- Bake on the middle rack for 20–25 minutes, until puffed and golden.
Serving
Serve with apricot jam.
