Sautéed Leeks

While experimenting with cooking leeks, we were pleasantly surprised by the outcome. This dish quickly became a favourite, compelling me to write down the recipe for future reference. It makes a savoury, delightful side for turkey, chicken, or even beef.

Ingredients

  • 1 leek, sliced into 2 mm rounds
  • 1 tablespoon butter
  • 1 teaspoon red pepper paste
  • 1 bowl of pre-boiled beans, such as navy beans

Spice Mix

  • ½ teaspoon salt

Steps

  1. Melt butter gently in a saucepan over medium heat for 1 minute.
  2. Sauté leeks until tender, about 3 minutes.
  3. Fold in the red pepper paste.
  4. Add the spice mix.
  5. Mix in the beans and stir well until warm through.
  6. Let it rest for 5 minutes before serving.

Serving

Serve with sliced roast turkey or chicken, accompanied by a simple green salad.
